My Journey with Autoimmune Disease and the Power of Nutrition
I'm Jennifer, a certified nutrition counselor with a passion for helping others find healing through food. But my journey into nutrition wasn't just a career choice – it was born out of personal necessity.
Diagnosed with my first autoimmune illness in my 30s, I had already experienced symptoms like eczema, worsening allergies, bronchitis, pneumonia, asthma, and migraines. Allergy testing in my late 20s revealed sensitivities to numerous environmental and food allergens, prompting me to recognize the impact of diet on my health.
I was diagnosed with Hashimoto's thyroiditis in my 40’s, an autoimmune condition that left me feeling exhausted, foggy-brained, and struggling with persistent weight gain. Despite following my doctor's recommendations and taking medication, I still felt far from my best self.
That's when I decided to take a deeper look at how my diet might be impacting my health. Through extensive research and personal experimentation, I discovered the profound impact that food choices can have on autoimmune symptoms.
I began by following an elimination diet similar to the Autoimmune Protocol (AIP). Within weeks, I noticed significant improvements in my energy levels, mental clarity, and overall well-being. The bloating I had grown accustomed to diminished, and I even saw my thyroid antibodies decrease over time.
This experience was truly transformative. It not only helped me manage my own symptoms but also ignited a passion for helping others with autoimmune conditions find relief through nutrition.
I went back to school, became certified as a nutrition counselor, and now dedicate my practice to supporting others on their healing journeys.
